Knead the dough with your hands, form a ball and let it rest in a cool place covered with a cloth for one night. Line the tart base mould with short pastry. Prick several times with a fork. Cover with quartered, peeled and (for better baking) cut apples.
Pour the cream over the top after 10 minutes baking time and bake for another 15 to 20 minutes in a very hot oven. Mix cinnamon with sugar and sprinkle over the tart after baking.
