Wash and quarter the apples and remove the core. Cut apple quarters into thin slices and sprinkle with lemon juice. Peel, halve and slice the carrots. Clean and wash the chicory, remove the outer leaves and wash.
Cut the remaining chicory into strips. Cut the cheese into small sticks. Wash and drain the sprouts. Clean, wash and pluck the salad. Peel and finely chop the onion. Season vinegar with salt, pepper and sugar.
Gradually fold in the oil. Mix all the salad ingredients with the marinade, except the leaves. Line plates with the chicory leaves. Arrange apple chicory salad on top. Serve garnished with parsley.
Serve with bread.
