Take the puff pastry out of the fridge. Wash and drain the raisins well. Mix sugar and cinnamon. Mix with raisins and butter. Peel apples, remove seeds with the apple cutter and fill with the raisin mix.
Preheat oven (electric cooker: 200°C/circulating air: 175°C/gas: see manufacturer). Line a baking tray with baking paper. Unroll the puff pastry and cut it into 4 equal rectangles. Place 1 apple on each rectangle, fold over the corners and press them well together.
Place apples on the tray. Bake in a hot oven for 20-25 minutes until golden brown.
Remove the apples and let them cool down. In the meantime, mix icing sugar and lemon juice to a glaze. Spread the apples with it and let them dry for a short time. Serve with vanilla sauce.
