Wash 1 organic orange and 1 organic lemon hot and peel about half of the peels thinly with a peeler.
Boil milk and 1 pinch of salt with orange and lemon peel and 1 stick of cinnamon in a wide pot.
Stir in rice pudding (round grain rice) and sugar. Bring rice pudding to the boil briefly and stir. Then lower the temperature and let the rice pudding swell for 20-30 minutes at medium to low heat.
Stir again and again so that the rice does not burn at the bottom of the pot. Turn off the heat, place the lid on the pot and leave the rice to swell on the heat for another 15 minutes. Cinnamon and if necessary
Remove orange and lemon peel.
Arroz con leche is traditionally served sprinkled with plenty of ground cinnamon.
