For the filling cut the bacon into cubes. Peel and finely dice the onion. Fry the bacon in a pan without fat. Add the onion and fry until transparent. Dice bread and cake.
Wash the thyme, shake dry. Pluck the leaves from the stalks, except for a little to garnish, and chop finely. Mix prepared ingredients and eggs. Season with 1/2 tsp salt. Wash turkey very thoroughly from the outside and inside and dab dry.
Mix 2 tsp salt, 1/2 tsp pepper and 1 tsp paprika. Season the turkey thoroughly from the inside. Add the filling. Close the opening with wooden skewers and kitchen string. Tie the legs together. Stick wings under the back.
Season the turkey from the outside with the remaining spice mixture. Place the turkey with the breast facing upwards on the fat pan of the oven. Coat with oil. Cook in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 2-2 1/2 hours.
If necessary, cover wings and legs with aluminium foil. Take the finished turkey out of the oven and let it rest for a short time. Arrange on a plate garnished with apple slices and thyme.
