Wash the potatoes, bring to the boil covered with water and cook for about 20 minutes. Drain potatoes, rinse under cold water and peel. Peel and finely dice onions. Bring the stock to the boil. Add onions and simmer for about 2 minutes. Cut potatoes into slices and pour the hot stock over them. Mix oil, mustard and vinegar and fold into the potato slices. Cut sausage into thin slices, cheese into small cubes and cucumber into slices. Add sausage, cheese and gherkins to the potatoes and fold in carefully. Leave to stand for approx. 1 hour. Season to taste with salt and pepper. Wash the chives, dab dry, cut into small rolls and sprinkle over the potato sausage salad
