Wash the apricots, grate them dry, halve them and remove stones. Peel ginger and cut into 12 very thin slices. Cut butter into 12 pieces. Place the apricot halves side by side on a baking tray lined with baking paper. Sprinkle apricot halves with brown sugar, place 1 ginger slice in each well and place 1 piece of butter on each. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 25 minutes
Roast the almonds in a pan without fat until golden brown, take them out. Mix crème fraîche, sugar and vanilla pulp. Remove the apricots from the oven, sprinkle with almonds. Spread the crème fraiche on 4 plates and arrange 3 apricot halves on each
