Bratwurst with bacon and mashed potatoes

Ingredients

  • 1 Savoy cabbage (approx. 1,2 kg)
  • 75 g streaky smoked bacon
  • 1 kg Potatoes
  • 7-10 Tbsp Salt
  • 1 TABLESPOON clarified butter
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 1 Onion
  • 50 g Cooked ham
  • 45 g Butter
  • 15 g Flour
  • 300 g Whipped cream
  • 150 ml Milk
  • 7-10 Tbsp Cayenne pepper
  • 1/2 TEASPOON grainy mustard
  • 1 TABLESPOON Oil
  • 4 Fried sausages (à approx. 100 g)
  • 7-10 Tbsp Parsley

Directions

    Clean the savoy cabbage, quarter it and cut out the stalk. Cut the savoy cabbage quarters into pieces and wash. Cut the bacon into fine cubes. Peel and wash the potatoes, cut them into large pieces and cook them in salted water for about 25 minutes until soft.

    Heat clarified butter in a large frying pan. Fry the bacon in it for 2-3 minutes, take it out. Sauté the savoy cabbage in the frying fat for about 5 minutes, turning, and season with salt, pepper and nutmeg. Add 150 ml water, put bacon back into the roasting pan.

    Cover and stew for about 12 minutes, season to taste.

    In the meantime peel and finely dice the onion. Cut the ham into fine cubes. Melt 15 g butter in a pot, fry onion and ham for about 3 minutes. Stir in flour, sweat briefly.

    Add 100 g cream and milk while stirring. Bring to the boil, simmer for about 6 minutes. Season to taste with salt, cayenne pepper, nutmeg and mustard.

    Heat 200 g cream and 30 g butter in a saucepan. Drain the potatoes and let them evaporate briefly, add the cream mix, mash to puree, season to taste with salt and nutmeg. Heat oil in a pan, fry sausages for about 6 minutes while turning.

    Savoy cabbage and sauce may be heated briefly, stirring the sauce. Arrange mashed potatoes, savoy cabbage, sauce and sausage on plates. Garnish with parsley.
