Mix yeast, 1/2 teaspoon sugar and 140 ml lukewarm water. Leave to rise for about 10 minutes. Mix flour and semolina well in a bowl. Add the yeast water and 150 ml lukewarm water and knead everything thoroughly with the dough hooks of the hand mixer
Cover and leave to rest for about 5 minutes. Then knead in 1/2 tsp. salt and oil. Divide into four pieces of the same size, form them into balls and let them rest covered in a warm place for about 30 minutes.
In the meantime, stir the crème fraîche until smooth, add salt, pepper and sugar. Peel onions and cut them into fine slices. Wash apples thoroughly, cut them into quarters and cut out the core. Cut quarters into thin slices
Wash the thyme, shake dry and pluck the leaves from the stalks. Grate cheese finely. Roll out the dough balls one after the other in thin layers on a floured work surface to form circles (approx. 25 cm Ø), place on baking paper. Pull a pizza on the baking paper onto a baking tray. cover dough with 1/4 crème fraîche, onion and apple slices, sprinkle with thyme and 1/4 of the cheese
Bake in the preheated oven (electric cooker: 225 °C/ convection oven: 200 °C/ gas: see manufacturer) for 10-12 minutes. Cover remaining pizzas with dish towels. Process one after the other with the remaining ingredients. Remove from the oven, sprinkle with 1 tablespoon of acacia honey and garnish with thyme as desired
