Cheese pancake with spring onions and bacon

Ingredients

Servings: 2
  • 3 Spring onions
  • 100 g Emmental (piece)
  • 4 Eggs (Gr. M)
  • 200 ml Milk
  • 150 g Flour
  • 7-10 Tbsp salt, pepper
  • 50 g Bacon (breakfast bacon)

Directions

    Clean and wash spring onions and cut into fine rings. Grate cheese. Separate eggs. Mix egg yolk, milk, flour and cheese. Season with salt and pepper. Beat the egg whites with the whisks of the mixer until stiff and fold in.

    Cut the bacon into strips and fry until crispy in a large coated pan without fat. Remove and add the egg and cheese mixture to the hot frying fat. Bake at medium heat until the garnish is golden brown from below.

    Cut in half with a spatula, quarter and bake for another 3 minutes until golden brown. Then tear into pieces with two forks or spoons. Add spring onions and fry for 2-3 minutes while turning.

    Fold in bacon.
