Clean and wash the chicory and cut it into strips, except for 8 beautiful outer leaves. Clean lamb's lettuce, wash thoroughly several times and drain. Wash the apples, prick out the core and cut the apples into rings.
Finely dice gherkins and coarsely dice beetroot. Mix vinegar, salt, pepper and mustard. Finally, fold in the oil. Wash dill and chives, dab dry and chop. Stir into the vinaigrette.
Arrange apple slices, chicory leaves and lamb's lettuce on 4 plates. Mix chicory, beetroot and gherkins and arrange on the salad plates. Pour vinaigrette over the salad and serve immediately.
