Wash the chives and, except for something to garnish, cut into fine rolls
Whisk eggs and milk. Season with salt, pepper and paprika. Stir in chives
Cut the bacon slices into thirds. In a coated frying pan, leave to drain until crispy. Take out and drain on kitchen paper. Let the egg mixture falter in the hot bacon fat at medium heat. Use a spatula to push the eggs together from the edge to the middle
Spread slices of bread with 1 teaspoon of fat each. Arrange the scrambled eggs and the bacon slices. Add the bread. Garnish with lettuce leaves, tomato and the remaining chives
If you want it without meat, you can leave out the bacon, let the egg fry in 1 tablespoon of hot fat and sprinkle with pumpkin seeds, for example
