Cut the apricots (if frozen, slightly thawed) into large pieces, preheat the oven to 180°C and place paper cups in a muffin tray.
In a bowl, mix the dry ingredients, i.e. flour, baking powder, baking soda, orange peel and cocoa. In another bowl beat the egg and whisk briefly. Then add sugar, oil and buttermilk and mix.
Now carefully fold in the dry ingredients and finally add the apricot pieces.
Fill the muffin forms to approx. 3/4 with dough and bake at 180°C for approx. 25 minutes. Spread the still hot muffins with some heated apricot jam and decorate with chocolate sprinkles.
