Wash the lentils and soak in 11/2 litres of water overnight. Put the bacon and lentils in a pot with the soaking water and bring to the boil. Clean, wash and finely dice the soup greens. Add to the lentils and cook for about 30 minutes. Take out bacon, remove rind.
Cut bacon into slices. Stir mashed potato powder into the soup, bring to the boil briefly. Season to taste with salt and pepper. Serve lentil soup with the bacon slices and garnish with parsley
