Wash the pear and cut into thin slices.Bring 1 teaspoon of sugar, lemon juice and 5 tablespoons of water to the boil. Cook the pear slices for 1 minute. Sprinkle the goat cheese taler with brown sugar.
Place under the preheated grill of the oven until the sugar has melted. Wash salads and shake dry. Wash thyme, pluck leaves from the stems and chop coarsely. Mix vinegar, mustard, salt, sugar and pepper.
Add oil. Fold in thyme. Arrange salad, pears and cheese taler on plates. Drizzle some salad dressing over it, add the rest.
