Wash and clean spring onions and cut them diagonally into rings. Peel garlic and cut into thin slices. Wash the prawns and dab them dry. Heat 1 tablespoon of oil in a pan. Sauté spring onions for 1-2 minutes and season with salt, curry and pepper.
Add rice and 2 tablespoons of water and heat for about 3 minutes. Meanwhile, heat 1 tablespoon of oil in a frying pan and fry the prawns for 3-4 minutes all round. After 1-2 minutes add garlic. Wash the coriander, chop the upper 1/3 and add to the rice. Season prawns with salt and some curry and arrange them on the rice
