Peel and finely dice the onions. Wash, clean and chop the zucchini. Heat 1 tablespoon of oil in a frying pan. Fry the onions and the zucchini for about 3 minutes. Season with salt and pepper
Wash the coriander, shake dry and pluck the individual leaves from the stems. Loosen the couscous with a fork, stir in 4 tablespoons of oil. Mix in onions, zucchini, coriander and raisins. Season with salt and pepper
