Dissolve yeast and sugar in 150 ml of lukewarm water. Mix 360 g flour, 1 tsp salt, 5 tbsp oil, egg white and 1 tbsp chili flakes in a bowl.
Add yeast and knead everything smooth with the dough hooks of the hand mixer. Cover and leave to rise in a warm place for about 1 hour.
Cut the dough in half and shape each into a roll. Cut each roll into 25-30 pieces. On a little flour first make balls, then thin sticks (approx.
18 cm long) form.
Place the grissini on two or three baking trays lined with baking paper. Mix 2 tbsp. oil and 1 tsp. chili flakes. Spread Grissini with it. Bake one after the other in a preheated oven (electric oven: 200 °C/circulating air: 175 °C/gas: level 3) for 15-18 minutes until golden brown.
Let it cool down. Keep dry.
