Clean, wash and drain the salad. Pluck leaves into bite-sized pieces. Remove the sausage from the skin and cut into large cubes. Cut cheese into large cubes as well. Peel onion and cut into rings. Clean and wash the radishes and cut them into sticks.
Wash chives, dab dry and cut into small rolls. Season vinegar with salt, pepper and sugar. Whip oil under it. Stir in chives. Arrange salad leaves on plates. Add the sausage, cheese cubes, onion rings and radish sticks and sprinkle with the vinaigrette.
