Fiesta Mexicana: Orange and cream cheese flans

Ingredients

  • 200 g Double cream cream cheese
  • 1 can(s) (400 ml) sweetened condensed milk
  • 250 g Whipped cream
  • 7-10 Tbsp scraped pulp from 1 vanilla pod
  • 1 pinch Salt
  • 4 Eggs (size M)
  • 4 Yolks (size M)
  • 4 Oranges
  • 3 TABLESPOONS Orange marmalade
  • 3 Stem(s) Lemon balm

Directions

    Stir cream cheese, condensed milk, cream, vanilla pulp and salt until smooth. Stir in eggs and egg yolks bit by bit. Divide the cream into 8 ovenproof moulds (each containing approx. 150 ml). Fill the fat pan of the oven about half full with hot water and place the moulds inside. Cook in the preheated oven (electric cooker: 150 °C/ circulating air: 125 °C/ gas: see manufacturer) for approx. 1 hour. Remove from the oven, allow to cool briefly and chill for at least 2 hours

    Peel oranges so that the white skin is completely removed. Cut out fillets between the parting skins. Stir jam until smooth. Mix the orange fillets with the jam. Wash the lemon balm, dab dry. Peel leaves and cut into fine strips. Spread the orange mixture into the moulds and sprinkle with lemon balm.
