Wash the chives and parsley and shake dry. Cut chives into small rolls, chop parsley. Mix cream cheese and quark. Add herbs, season with salt and pepper.
Cut the ham slices in half crosswise. Spread some herb cream on each slice and roll up. Wash the salad leaves and dab dry. Arrange ham rolls with salad leaves and olives. Garnish with a few chive stalks as desired.
