Fine potato soup

Ingredients

Servings: 6
  • 600 g Potatoes
  • 4 Apples (about 100 g each)
  • 7-10 Tbsp Juice of 1 lemon
  • 1 small onion
  • 1 TABLESPOON Butter or margarine
  • 1 l Vegetable broth (instant)
  • 6 discs Bacon
  • 100 g Whipped cream
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp Thyme
  • 6 wooden skewers

Directions

    Peel and wash the potatoes, cut them into pieces and put them aside covered with water. Peel 3 apples, remove seeds and cut into pieces. Sprinkle with 2 tablespoons of lemon juice and set aside. Peel and finely chop the onion. Heat the fat in a large pot and fry the onion until transparent. Add apple and potato pieces, add stock and simmer for about 20 minutes.

    In the meantime, fry bacon in a coated pan until crisp and drain on kitchen paper. Wash the remaining apple, rub dry and cut into slices. Cut out stars as you like and sprinkle with remaining lemon juice. Finely puree the soup, add cream and season to taste with salt and pepper. Spread the bacon, apple stars and apple slices on the wooden skewers and arrange on the soup bowls. Serve garnished with thyme
