Cut bread into 4 thick slices. Cut each slice into 5 sticks of equal width. Whisk eggs, cream, cinnamon, sugar and vanillin sugar well. Place bread sticks next to each other in a flat form. Pour egg cream evenly over the bread sticks.
After approx. 5 minutes turn the sticks, let them steep for another 5 minutes until the bread sticks have completely absorbed the egg cream. Heat the clarified butter in 3-4 portions in a pan. Fry the sticks in portions at medium heat until golden brown while turning.
Remove and keep warm.
Wash the apricots, drain, cut in half and remove the stone. Cut the apricots into slices. Arrange bread sticks and apricots on plates. Sprinkle with honey and possibly dust with icing sugar.
