Clean the mushrooms and cut them in half. Cut ham into strips. Wash chives, dab dry and cut into rings. Clean, wash and cut spring onions into rings. ##eggs##, chives
Season with salt and pepper. Heat 1 teaspoon of oil in 2 pans (approx. 22 cm Ø). Fry half each of the mushrooms and ham. Add spring onions and fry for 1-2 minutes. If necessary, take something out of each pan to sprinkle and drain.
Spread egg milk evenly into the pans. Stir occasionally and allow to set slightly, then cover and allow to set over a low heat for 10-12 minutes. Arrange the frittatas and sprinkle with ##mushroom## ham mixture.
