Goat cheese taler on lamb's lettuce

Ingredients

  • 75 g Lamb's lettuce
  • 7-10 Tbsp some sprigs of thyme
  • 1 Shallot
  • 1 big tomato
  • 1 coated Tsp Instant vegetable stock
  • 1 TEASPOON Oil
  • 1-2 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 2 discs (40 g) Baguette
  • 1 Small round soft goat cheese (Picandou; 40 g)
  • 1 TEASPOON Sugar

Directions

    Wash and clean the salad and drain well. Wash the thyme, shake dry, put some aside for garnishing, chop the rest finely. Peel and finely dice the shallot. Wash and halve the tomato.

    Cut one half into slices. Core the other half and cut into small cubes. Mix stock with 150 ml hot water. Stir in oil, shallot, thyme and diced tomatoes. Season to taste with vinegar, salt and pepper.

    Toast slices of bread in a toaster. Sprinkle goat cheese with sugar. Caramelise briefly under the hot grill for 1-2 minutes. Arrange salad and tomato slices on a plate. Drizzle with vinaigrette.

    Add goat's cheese and garnish with thyme. Add bread.
