Cut the gherkins into fine slices. Mix mustard and honey. Season with salt and pepper. Pluck the lettuce leaves, wash and pat dry. Roast 4 slices of toast and cut in half diagonally.
Cover 1 half each with salad leaf, cooked ham and gherkin. Drizzle sauce over it. Sprinkle with fried onions. Place other halves on top. Cut cheese into flat pieces. Wash, clean and slice the tomatoes.
Cut the bacon into pieces and let it crisp in a frying pan. Toast remaining slices of toast, cut diagonally in half and spread with mayonnaise. Cover with salad and remaining prepared ingredients.
