Place skewers in cold water for at least 1 hour. Wash, halve and stone the apricots. Cut cheese into about 16 pieces. Wash parsley, shake dry, pluck leaves, chop. Put cheese and apricots alternately on the skewers.
Coat with oil. Grill on the hot grill all around for about 5 minutes. Arrange and drizzle with honey. Sprinkle with parsley and dukkah.
Skewer tip: If the wooden skewers are soaked in water before grilling, they do not burn as quickly and meat, cheese etc. can be removed from the skewer more easily.
