Wash and drain the cherries. Put some cherries aside for decoration. Cut the remaining cherries in half and stone them. Wash lime hot, grate dry and grate half of the peel.
Halve the lime and squeeze 1 half. Mix mascarpone, quark, yoghurt, sugar, vanillin sugar and lime zest. Season with lime juice. Fold in cherries. Coarsely chop 4 crispy puffed rice.
Serve the quark with the remaining crispy puffed rice, decorate with the remaining cherries and sprinkle with chopped puffed rice.
