Clean the salad, cut into strips and wash. Wash cress and pluck leaves from the stems. Cut melons into slices, remove seeds. Peel and slice the fruit flesh.
Dice sheep's cheese. Mix salad, cress, melons and sheep's cheese. Mix vinegar and honey, season with salt and pepper. Fold in the oil. Arrange salad on plates, drizzle vinaigrette over it.
It goes well with baguette bread.
