Lukewarm gnocchi salad with bacon, radicchio and cherry tomatoes

Ingredients

Servings: 4
  • 200 g streaky bacon
  • 1 Onion
  • 400 g fresh gnocchi (cooling shelf)
  • 1 (approx. 100 g) Head radicchio salad
  • 250 g cherry tomatoes
  • 5 TABLESPOONS light balsamic vinegar
  • 100 ml Vegetable broth
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Stem(s) Lemon thyme

Directions

    Cut the bacon into strips and leave them crisp in a pan without fat. Peel onion and cut into fine cubes. Add gnocchi and onion to the bacon and fry for 6-8 minutes. Clean and wash the salad and shake dry.

    Roughly pluck leaves. Wash and halve the tomatoes.

    Add tomatoes and lettuce to the gnocchi and fry for another 3 minutes. Deglaze with vinegar and broth. Season to taste with salt and pepper. Wash the thyme, shake dry and pluck leaves from the stalks.

    Add thyme to the gnocchi. Arrange the salad on a plate.
