Wash the squid tubes and cut them into thin rings. Cook in boiling salted water for about 1 minute. Rinse immediately and drain. Drain prawns in brine
Peel and chop the garlic. Mix with lemon juice, salt, pepper and possibly sugar. Whip the oil vigorously into the mixture. Mix squid rings, shrimps and marinade. Leave to stand for about 1 hour.
Clean and wash the romaine lettuce and pluck it a little smaller if necessary. Wash and finely chop the parsley. Line plate or dish with romaine lettuce. Arrange seafood on top and sprinkle parsley over it. Garnish the salad with lemon if necessary. Served with: bread
