Clean, wash, pat dry and dice the radishes. Drain gherkins and cut into fine strips. Peel apple, cut into eighths and cut out the core. Cut eighths into thin slices. Wash the maties, dab dry and cut into strips.
Mix all salad ingredients in a bowl. For the sauce, peel and finely dice onions. Mix mayonnaise, sour cream, onions, horseradish and four tablespoons of cucumber water. Season to taste with a little salt and mix into the salad ingredients. Leave to stand for at least an hour. Wash the potatoes and cook in boiling water for 20 minutes. Wash chives, dab dry and cut into small rolls. Pour potatoes onto a sieve, rinse with cold water and peel. Heat the fat in a saucepan, toss the potatoes and chives in it.
