Clean and wash broccoli and cut into florets. Cover and steam in boiling salted water for 6-8 minutes.
Preheat oven (electric cooker: 225°C/circulating air: 200°C/gas: level 4). Wash meat, pat dry, cut into 8 medallions. Wrap 1 slice of bacon around each medallion. Heat oil in a large ovenproof pan.
Fry the medallions in it for about 3 minutes on each side. Season with salt and pepper.
Drain the broccoli and collect 100 ml of vegetable water. Spread broccoli around the medallions. Mix the vegetable water and sauce hollandaise. Season with pepper and a little salt. Pour over medallions and broccoli.
Sprinkle with almonds. Bake in a hot oven for 5-7 minutes. Baguette tastes good with it.
