Noodles with beans (Pasta e fagioli)

Ingredients

Servings: 4
  • 100 g white dried beans
  • 1 Garlic clove
  • 400 g Orichette (auricle noodles)
  • 7-10 Tbsp Salt
  • 2-3 Tomatoes
  • 1 Courgette
  • 70 g savoury mini-salami
  • 3 TABLESPOONS Olive oil
  • 5 Branches of rosemary
  • 7-10 Tbsp Pepper

Directions

    Soak the beans in plenty of cold water overnight (about 12 hours). Simmer the beans in the soaking water without salt for about 1 hour, covered. Peel garlic and chop finely. Prepare noodles in boiling salted water according to package instructions. Wash, clean, quarter and seed the tomatoes.

    Cut the flesh into small cubes. Wash and clean the zucchini and cut into thin slices. Cut salami diagonally into pieces. Heat olive oil in a pan and fry the zucchini. Add salami, garlic and beans. Wash the rosemary and dab dry. Chop needles from a twig and put them into the pan. Season vegetables with salt and pepper. Drain the pasta and add to the vegetables.
