Wash and clean the tomatoes and, except for 1/2 tomato for garnishing, dice them finely. Wash parsley, shake dry, pluck leaves from the stalks and chop finely. Finely dice the gherkins.
Peel the shallots and cut into fine cubes. Finely dice Limburger. Knead cream cheese, butter and Limburger with a fork. Stir in all other prepared ingredients and season with salt and pepper.
Arrange Obatzter and garnish with tomato.
