Carefully wash, clean and drain the chanterelles. Peel and chop the onions. Cut the bacon into small cubes. Wash and finely chop parsley. Mix eggs and milk, season with salt and pepper.
Stir in the parsley, except for something to garnish. Fry bacon in a pan, add onions and fry briefly. Add chanterelles and fry for about 3 minutes. Pour egg milk over it and let it simmer for about 10 minutes covered at low heat.
Sprinkle with the rest of the parsley.
