Wash the meat, dab dry and cut into cubes. Peel onions and cut into strips. Peel and wash potatoes and cut into cubes. Heat oil in a pot. Fry the meat for about 10 minutes while turning it.
After about 4 minutes add potatoes. After about 8 minutes add onions. Deglaze with broth and wine. Add thyme and bay leaf, bring to the boil and simmer for 15-20 minutes. Season to taste with salt, pepper and sugar.
