Oven grilled Asian salmon

Ingredients

Servings: 4
  • 1 large piece (60 g) of ginger
  • 2 Garlic cloves
  • 1 bunch/pot of coriander
  • 6 TABLESPOONS Soy sauce
  • 1 (approx. 1.2 kg; with skin) Salmon page
  • 2 Spring onions
  • 1 red chilli pepper
  • 3-4 Tbsp liquid honey
  • 7-10 Tbsp Cling film

Directions

    For the marinade, peel the ginger and cut into fine sticks. Peel garlic and chop finely. Wash the coriander, shake dry, pluck the leaves from the stalks and set aside. Chop the stems finely.

    Mix soy sauce, ginger, garlic and coriander stalks. Rinse fish, dab dry and rub with the prepared marinade. Cover with foil and chill for at least 1 hour.

    Place the salmon on a baking tray and grill under the hot oven grill for about 12 minutes. In the meantime clean and wash the spring onions and cut them diagonally into very fine rings. Clean and wash the chillies and cut them into fine rings with seeds.

    Approx. 5 minutes before the end of the grilling time, remove the salmon, sprinkle with honey and sprinkle with chilli. Grill to the end.

    Take salmon out of the oven. Sprinkle with coriander leaves and spring onions. Serve with rice and vegetables.
