Pasta with tomatoes and basil

Ingredients

Servings: 4
  • 6 Vine tomatoes
  • 4 Stem(s) Basil
  • 1 small clove of garlic
  • 1 small onion
  • 300 g Chicken filet
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 5 TABLESPOONS Olive oil
  • 400 g thin spaghetti (cappelini)
  • 2 TABLESPOONS White wine vinegar

Directions

    Wash, clean, quarter and seed the tomatoes. Cut the flesh into small cubes. Wash basil, shake dry, pluck off leaves and, except for some for garnishing, cut into thin strips.

    Peel and finely chop the garlic. Peel onion and chop very finely.

    Wash the meat, dab dry and season with salt and pepper. Heat 1 tablespoon of oil in a frying pan. Fry the chicken fillets for 8-10 minutes while turning. Prepare noodles in boiling salted water according to instructions on the packet.

    Mix tomatoes, diced onion, garlic, basil strips, vinegar and 4 tablespoons of oil and season with salt and pepper.

    Remove meat from the pan and cut into slices. Drain the noodles. Arrange meat, noodles and tomatoes on plates and garnish with basil. Grated Parmesan cheese is delicious with it.
