Peel and finely chop the onion. Heat the oil in a pot and fry the onion for 2-3 minutes. Add stock and bring to the boil
Add peas, bring to the boil, sauté for 2-3 minutes, season with salt, pepper and nutmeg. Wash parsley, dab dry, pluck leaves from the stalks. Chop leaves finely, mix with peas shortly before serving
