Peel onion and carrots. Chop the onion finely. Cut carrot and bacon into small cubes. Heat oil in a frying pan. Add bacon and onions and fry for about 2 minutes. Prepare pasta in boiling salted water according to package instructions.
Add the mince and fry for 3-4 minutes until crumbly. Deglaze with orange juice. Add tomatoes, stock and tomato paste and simmer for 5-7 minutes. Season sauce with salt, pepper and some chilli paste.
Wash the thyme, dab dry and pluck the leaves from 3 stems. Drain the noodles. Add the thyme leaves to the sauce. Serve the sauce and penne with orange wedges, thyme, orange zest and Parmesa
