Wash and clean the zucchini and cut into thin slices. Peel garlic and cut into fine slices. Heat the oil in a wide saucepan, sauté the garlic and courgettes for about 3 minutes, dust with sugar, caramelise, deglaze with vinegar and remove from the heat.
Wash the oregano and mint, shake dry and chop. Add herbs to the zucchini, season with salt and pepper. Tastes good with spaghetti with tomato sauce.
