Plaice rolls with smoked salmon

Ingredients

  • 1 Kopf Broccoli (approx. 400 g)
  • 6 double plaice fillets (approx. 150 g each)
  • 1/2 bunch Parsley
  • 1/2 bunch Dill
  • 1 TEASPOON medium hot mustard
  • 1 TABLESPOON Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 package (150 g) smoked salmon in slices
  • 7-10 Tbsp Juice of 1 lemon
  • 100 ml dry white wine
  • 8 black peppercorns
  • 2 Bay leaves
  • 200 g Noodles (e.g. tagliatelle)
  • 25 g Butter or margarine
  • 25 g Flour
  • 150 g Whipped cream
  • 1 pinch Sugar
  • 7-10 Tbsp Dill
  • 7-10 Tbsp wooden skewers

Directions

    Cut the broccoli florets from the stems and wash them. Rinse the fish, dab dry with kitchen paper and cut in half lengthwise. Wash parsley and dill, dab dry and chop finely. Mix mustard, oil and herbs. Season with salt and pepper. Brush one side of the fish fillets with the herb mixture and spread salmon slices on top.

    Roll them up and stick them together with wooden skewers. Bring lemon juice, 500 ml water, wine, peppercorns, salt and laurel to the boil. Put the fish rolls in and let them simmer for about 8 minutes. Meanwhile cook the pasta in boiling salted water for about 10 minutes. After 5 minutes, add broccoli and cook for 5 minutes. Remove the fish rolls from the stock. Measure 300 ml of the brew and put aside. Melt the fat in a pot, dust with flour and sauté. Deglaze with fish stock and cream. Boil up while stirring. Simmer for 1-2 minutes and season with salt, pepper and sugar. Drain pasta and broccoli.
