Peel the skin off the sausage. Cut the sausage into slices. Peel and finely dice onion and garlic. Peel and wash both potatoes and cut them into bite-sized cubes.
Heat the oil in a large pot. Fry the sausage on both sides for 1-2 minutes, remove. Sauté onion and garlic in hot frying fat. Add all potatoes and dust with paprika.
Add a good 1 l water, bring to the boil and stir in the stock. Cover and cook for about 25 minutes.
Add the frozen spinach to the soup for the last 15 minutes. Add sausage to the soup, heat. Season soup with salt, pepper and paprika.
