Soak the buns. Peel and finely dice the onion. Squeeze out the buns. Mix minced meat, bread roll, onion cubes, egg, mustard and tomato paste. Season with salt, pepper and dried herbs.
With moistened hands form meatballs from it. Fry in hot oil over medium heat for about 8 minutes, turning. For the salad, clean, wash and halve the cherry tomatoes. Cut 2 gherkins into slices.
Quarter the remaining cucumbers lengthwise. Wash the chives and cut into small rolls. Fold tomatoes, cucumber slices and chives into the potato salad. Arrange the meatballs on salad and parsley leaves.
Serve the cucumber quarters with the potato salad.
