1 Open and seed the pepper and cut it into pieces. Drain the sun-dried tomatoes and sardines.
2 In a food processor, blend the tomato, pepper and cream cheese in a bowl for 30 seconds. Add the sardine and blend for another 30 seconds.
3 Squeeze the lemon, add it to the sardine rillettes. Season with salt and pepper. Reserve in a cool place until ready to serve.
