Place the Parmesan cheese in eight heaps on a baking tray covered with baking paper. Press flat and bake in a preheated oven (electric range: 175 °C/ convection oven: 150 °C/ gas: level 2) for 8-10 minutes until golden brown.
In the meantime wash apples and cut them into thin slices. Wash the rocket and dab dry. Season vinegar with salt, sugar and pepper. Stir in oil in a thin stream, season to taste. Take the Parmesan crackers out of the oven and let them cool down.
Cut goat cheese into thin slices. Pour vinaigrette over the salad and arrange on plates with apple slices, goat cheese and Parmesan crackers.
