Clean and wash the peppers and cut them into fine strips. Peel 2 oranges so that the white skin is removed. Cut the fillets out of the parting skins. Press the juice from the parting skins into a bowl.
Squeeze 1 orange. Clean and wash spring onions and cut into rings. Wash parsley, dab dry and chop. Clean and wash lamb's lettuce. Mix orange juice and vinegar, fold in oil.
Season to taste with salt, pepper and sugar. Pluck the sauerkraut apart. Mix paprika ripeness, orange filets, spring onions and lamb's lettuce. Pour marinade over it and let it soak through a little. Arrange the salad on a plate and serve sprinkled with parsley.
This is accompanied by tasty farmhouse bread.
