Defrost the shrimps first, if necessary. Heat the oil in a frying pan and fry the prawns for 2-3 minutes, turning them over. Season with salt. Leave to cool and chop roughly.
Peel the cucumber, remove the seeds and dice finely. Peel the mango, cut the flesh off the stone. 1⁄2 Finely dice the mango, dice the rest roughly. Puree the coarse cubes and lime juice and season to taste with 1 pinch of salt and sugar each.
Wash the chives and cut into fine rolls. Mix the prawns with the chives.
Divide the mango cubes into four glasses and add the cucumber cubes. Drizzle with some mango dressing. Then spread the prawns on the glasses. Add the rest of the dressing. Serve with baguette.
