  • 25 g + 200 g soft butter
  • 100 g Double cream cheese
  • 25 g + 125 g sugar
  • 25 g + 200 g flour
  • 100 g Dark chocolate
  • 1⁄2 Tsp Baking Powder
  • 50 g Cocoa
  • 125 g demerara sugar
  • 1 Egg (Gr. M)
  • baking paper

Directions

    For the filling melt 25 g butter and let it cool down. Mix cream cheese and 25 g sugar. Stir in 25 g flour and liquid butter. Cover the cream cheese filling and chill for about 30 minutes.

    In the meantime, finely chop the chocolate. Mix 200 g flour, baking powder and cocoa in a bowl. Cream 200 g butter, 125 g sugar and brown sugar with the whisks of the mixer. First stir in the egg, then the flour mixture and finally the chocolate.

    Preheat oven (electric cooker: 200 °C/circulating air: 175 °C/gas: see manufacturer). Line two baking trays with baking paper. Use an ice-ball former to cut 10 balls from the chocolate dough. Press the balls flat and spread them out on the baking trays at a distance.

    Place 1 teaspoon of cream cheese mixture on each chocolate glaze.

    Cut off another 10 dough balls and press them flat. Carefully place them on the chocolate glaze and press the edges well together. Carefully press the cracks in the surface of the dough together again or close them with some dough.

    Bake the baking trays one after the other in a hot oven for about 12 minutes. Leave to rest on the baking tray for approx. 5 minutes, then carefully pull down and allow to cool.
